Taste of the Caribbean Cooking Class
The Caribbean has many culinary influences, from Africa to England. They love their fish, and the Scotch Bonnet pepper!! Garlic, green shallots ( scallions), marjoram, red and green peppers, and a hint of curry are the favorite flavors. The menu is my interpretation of the cuisine and not everything is from the region, but a combination of all the islands in and around the Caribbean.
